What is Falafel? 

In its simplest form, FALAFEL is fried balls of ground chickpeas—a popularized Israeli street staple with controversy over its origin. We tell the version dating FALAFEL to the Coptic Christians in Egypt who ate a fava bean version called TA'AMIYEH, translating to A BITE OF FOOD. Somewhere along the journey, chickpeas replaced fava beans and it landed in Israel! 

The YALLA GREEN FALAFEL is a tribute to my mother, packed with herbs making it a fluorescent green mixture of simple ingredients—overnight soaked and hand sorted chickpeas, fresh cilantro, fresh parsley, house-ground cumin, and salt. The magic to the mix is found its simplicity and source. We source FRESH, LOCAL (where possible) ingredients from VALUES-ORIENTED partners.
